Soft and Chewy Chocolate Chip Cookies

I've been testing and perfecting chocolate chip cookie recipes for more than 10 years, and if there's one dessert I'll never get tired of, it's a classic chocolate chip cookie. There's something special about a warm cookie fresh from the oven—the smell, the nostalgia, and the way it brings people together. To me, a good chocolate chip cookie is more than just dessert; it's comfort, tradition, and a little bit of nourishment for the soul.


For over a decade, I've been on a mission to bake the perfect chocolate chip cookie. While I've tried countless recipes and techniques over the years, my love for a classic chocolate chip cookie has never changed. There's just something about a warm, homemade cookie that feels comforting and familiar—a simple treat that nourishes the soul.


These cookies are soft in the center, perfectly golden around the edges, and packed with rich flavor thanks to one simple ingredient: pure vanilla extract.

Vanilla may seem like a small addition, but it enhances every other flavor in the recipe and gives homemade cookies that bakery-style taste we all love.


Soft and Chewy Chocolate Chip Cookies

Servings: 16-18 cookies


Ingredients

  • 2 cups all-purpose flour

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 1 cup packed brown sugar

  • ¾ cup unsalted butter, melted

  • ½ cup white sugar

  • 1 large egg

  • 1 egg yolk

  • 1 tablespoon vanilla extract ( I measure with my heart)

  • 2 cups semisweet chocolate chips


Directions

  1. Gather all ingredients. 

  2. Sift flour, baking soda, and salt together; set aside.

  3. Beat brown sugar, melted butter, and white sugar with an electric mixer in a large bowl until smooth.

  4. Beat in egg, egg yolk, and vanilla until light and creamy; add flour mixture and stir until dough is just combined.

  5. Stir in chocolate chips.

  6. Cover the dough and refrigerate cookie dough for 2-3hrs. Do not skip this step. It will impact your cookies. 

  7. Take the dough out of the fridge and let it slightly soften at room temperature for about10 mins. 

  8. Preheat the oven to 325 degrees F (165 degrees C). Line cookie sheet with parchment paper.

  9. Roll approximately 3 tablespoons of dough into balls.  Roll the cookie dough balls to be taller than wider to ensure the cookies will bake up to be thick. 

  10. Place cookie dough balls  3 inches apart onto the prepared parchment lined baking sheets.

  11. Bake cookies in the preheated oven until edges are golden, about 12 to 13 minutes.The cookies will look soft and underbaked. Trust the process as they will continue to bake on the cookie sheet. 

  12. Allow to cool on the cookie sheets for about 10 mins before transferring them to a wire rack to cool completely.

  13. Cookies will stay fresh when covered at room temperature for up to 1 week.
