Easy Make-Ahead Breakfast Casserole

Ingredients

  • 1 (20 oz) package refrigerated hash browns (or frozen, thawed)

  • 8 large eggs

  • 1 cup milk

  • 2 cups shredded cheddar cheese

  • 1 cup cooked breakfast sausage or diced ham (optional)

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • Chopped green onions (optional, for garnish)


Instructions

  1. Preheat the oven to 375°F. Grease a 9×13-inch baking dish.

  2. Spread the hash browns evenly in the bottom of the dish.

  3. Sprinkle the sausage (if using) and shredded cheese over the hash browns.

  4. In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper.

  5. Pour the egg mixture evenly over the casserole.

  6. Bake for 40–45 minutes, or until the center is set and the top is lightly golden.

  7. Let the casserole rest for 5–10 minutes before slicing and serving.


Optional Add-Ins

  • Diced bell peppers

  • Precooked turkey sausage crumbles

  • Cooked bacon

  • Mushrooms

  • Monterey Jack or pepper jack cheese


Serve With

  • Fresh fruit

  • Toast or English muffins

  • Yogurt
